I'm not the hugest fan of carrots, and only really like them raw. I was never even that much of a fan of carrot and coriander soup until I had one in Caffe Nero just before Christmas. This has been my favourite to have for lunch recently with some toasted pittas. I like the Food Doctor seeded ones. I can usually get about 3 generous servings out of this recipe, but feel free to double it if you like. Soups are so versatile and perfect for the winter. They are such a cheap and healthy option to take to work instead of opting for a Boots Meal Deal (c'mon, we're all guilty of falling into the BMD trap).
Ingredients
1 bag carrots
1 onion
1l stock made with 2 Kallo Low Salt Stock Cubes
1 tsp ground coriander
1/2 tsp turmeric
Sprinkle cumin seeds
1 cal spray
Salt and pepper to taste
Fresh coriander
The Recipe
1) Dice the onion and place it in a large saucepan with a few squirts of 1 Cal Spray. Add a little salt to keep it from burning and soften on a low heat.
2) Peel and chop the carrots.
3) Stir in the spices and add a little water. Let the spices cook out slightly and add the carrots to the pan.
4) Pour in the stock, put a lid on the pan and simmer for about 40 mins or until carrots are soft.
5) Add some coriander to the soup before blending. You may have to do it in batches.
6) Return to the heat and season to taste.
This is such a cheap and easy soup to make, and it is so healthy too! Let me know if you decide to make it!
